Homemade Black Bean Sweet Potato Taquitos
Say goodbye to Costco Taquitos…and HELLO to the homemade version.
Ingredients
12 mini tortillas (flour or corn)
Black Bean Mix
1 15 oz can of low sodium black beans, rinsed and drained.
1/4 cup of (cream) cheese. If using regular shredded cheese, use later when preparing the Taquitos.
2 tbsp of salsa
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp cumin
1 tsp onion powder
1/8 tsp salt
Roasted Potatoes
1 sweet potato, diced
1 tbsp oil
1/4 tsp chili powder
Pinch of salt & pepper
Instructions
Preheat the oven to 400 F. On a parchment paper lined sheet, spread the sweet potato, olive oil and spices. Bake until tender (about 10-15 minutes).
In a food processor, combine all the ingredients except the tortillas until you get a spreadable mix.
Assemble the Taquitos by layering 1 heaping tablespoon of the mix onto a tortilla shell, adding on 3-4 sweet potato cubes and sprinkling on cheese as desired. Roll it into a cigar-like shape.
Bake the Taquitos at 350 F until slightly golden.
