Homemade Black Bean Sweet Potato Taquitos

 

Say goodbye to Costco Taquitos…and HELLO to the homemade version.

Ingredients

  • 12 mini tortillas (flour or corn)

Black Bean Mix

  • 1 15 oz can of low sodium black beans, rinsed and drained.

  • 1/4 cup of (cream) cheese. If using regular shredded cheese, use later when preparing the Taquitos.

  • 2 tbsp of salsa

  • 1/2 tsp chili powder

  • 1/2 tsp garlic powder

  • 1/2 tsp cumin

  • 1 tsp onion powder

  • 1/8 tsp salt

Roasted Potatoes

  • 1 sweet potato, diced

  • 1 tbsp oil

  • 1/4 tsp chili powder

  • Pinch of salt & pepper

Instructions

  1. Preheat the oven to 400 F. On a parchment paper lined sheet, spread the sweet potato, olive oil and spices. Bake until tender (about 10-15 minutes).

  2. In a food processor, combine all the ingredients except the tortillas until you get a spreadable mix.

  3. Assemble the Taquitos by layering 1 heaping tablespoon of the mix onto a tortilla shell, adding on 3-4 sweet potato cubes and sprinkling on cheese as desired. Roll it into a cigar-like shape.

  4. Bake the Taquitos at 350 F until slightly golden.

  5. Freeze & air fry for later!
