Easy Mediterrean "Taco"

 

Ingredients

  • 1 pita bread, toasted

  • 1.5 tbsp of hummus

  • 1 Lebanese cucumber, chopped

  • 3 Cherry tomatoes, halved

  • 2 tbsp of crumbled feta

  • (optional) Leftover cooked chickpeas

  • Parsley, as much as you like!

  • Olive oil or lemon juice, to taste

Instructions

  1. Heat the pita bread in a toaster or panini press.

  2. Fold the pita in half and spread on the hummus.

  3. Add in the parsley, feta, chopped tomates and cucumber.

  4. Drizzle with a bit of olive and/or lemon juice

  5. Enjoy!
