Easy Mediterrean "Taco"
Ingredients
1 pita bread, toasted
1.5 tbsp of hummus
1 Lebanese cucumber, chopped
3 Cherry tomatoes, halved
2 tbsp of crumbled feta
(optional) Leftover cooked chickpeas
Parsley, as much as you like!
Olive oil or lemon juice, to taste
Instructions
Heat the pita bread in a toaster or panini press.
Fold the pita in half and spread on the hummus.
Add in the parsley, feta, chopped tomates and cucumber.
Drizzle with a bit of olive and/or lemon juice
