Loaded Breakfast Burritos

Ingredients
Scrambled eggs
1 tbsp olive oil
3-4 eggs
2 tbsp milk
Salt & pepper, to taste
Tofu scramble
1 tbsp olive oil
1 block firm tofu
2 tbsp of nutritional yeast
1/2 tsp salt, or more to taste
1/4 tsp turmeric
1/4 tsp garlic or onion powder
2 tsp milk, unsweetened and unflavored
Assembly
1 tortilla
Veggies of choice (ex: avocado, spinach, kale, mushrooms, caramelized onions, bell pepper, etc.)
(Optional) Cheese, grated
(Optional) Hot sauce
Instructions
1. Prepare the other ingredients you’d like to add in to your breakfast burrito (ex: sliced avocado, sautéed kale/spinach, caramelized onions, grated cheese etc.).
2. Prepare your protein. Heat the oil in a pan over medium heat.
For the scrambled eggs: In a separate bowl, crack the eggs and whisk in the milk. Cook the eggs in the oiled-pan and salt & pepper to taste.
For the tofu scramble: Mash the tofu block with a fork or crumble it with your hands into the pan. Cook for 3-4 minutes, stirring frequently. Add in the nutritional yeast, salt, turmeric and garlic/onion powder until well combined (about 5 minutes). Pour in the milk into the pan and stir to mix, the texture should resemble scrambled eggs!
3. It’s time to fold it into a burrito! On a clean surface, place a tortilla and add in the ingredient filling in a line down the center of the tortilla, but don't overfill it!
Fold the sides by taking the left and right edges of the tortilla and fold them inward, covering the sides of the fillings.
Roll it up Start at the bottom (the side closest to you) and gently fold the tortilla over the fillings. Keep rolling it up tightly towards the top, like you're wrapping a present.
Seal it When you get to the top, tuck in any loose edges and roll all the way to the end. Your burrito is ready!
4. If you like your tortilla heated, you can add it back into the pan to toast it or place it in a hot panini grill.
5. Enjoy with hot sauce!
