Cheesy High-Protein Omelet
This recipe makes for the perfect post-workout meal, with up to 22g from the omelet alone!
Serves: 1
Ingredients
2 large eggs
1/4 cup cottage cheese, divided
1 tablespoons parmesan
Salt & pepper, to taste
1 tsp of butter or olive oil
1 handful of kale, chopped
Instructions
In a bowl, crack the eggs and add 1.5 tablespoons of cottage cheese, all the parmesan, salt and pepper. Whisk until well combined.
In a heated pan, add the olive oil/butter. Pour the egg mixture into the pan, distribute the egg mixture with a spatula to cook the egg.
In a small bowl, add the kale and water then cook in the microwave for 30 seconds.
Spoon the remaining cottage cheese and heated kale onto the omelet. Fold the omelet and keep it in the pan for another minute.
Serve with fresh bread and fruits.
