Breakfast Egg Wraps

 

Transform your leftover produce into delicious and nutritious egg wraps! Perfect for a quick breakfast, lunch, or dinner, these versatile egg wraps are not only filled with health ingredients, but they’re also a fantastic way to reduce your food waste!

Servings: 4

Ingredients

  • Lavash bread, cut into large squares

  • 1/2 carton of egg whites and/or 4 whole eggs, whisked

  • Cheese, shredded

  • Veggies of choice (ex: spinach, bell pepper, mushroom, onion, etc.)

  • 1 tsp olive oil

Directions

  1. Preheat the oven to 375 F.

  2. Chop all veggies into bite-sized pieces.

  3. Line a baking pan with parchment paper, then add a drizzle of oil.

  4. Pour the egg batter and veggie ingredients into the pan.

  5. Bake until the egg is cooked through.

  6. Once cooled (this is an important step so you’re bread doesn’t get soggy!), cut the egg bake into squares.

  7. Wrap the egg squares in the Lavash bread like a burrito and form an enveloped square.

  8. Serve with your favourite hot sauce and enjoy!
