Chocolate Puffed Quinoa Bars

 

Prep Time: 10 minutes Yields: 9 squares

A delightful homemade snack bar treat (and a great pre-post workout bite)!

Ingredients

Bars

  • 1/3 cup soft dates, seeded

  • ¼ cup of nut or seed butter

  • ¼ cup of milk

  • 1.5 tbsp cacao powder

  • (optional) 1 scoop of chocolate protein powder

  • 1 tbsp hemp seeds

  • ¼ teaspoon cinnamon

  • ¼ teaspoon sea salt

Chocolate Glaze

  • 1 tsp coconut oil

  • 4-6 dark chocolate squares

Instructions

  1. In a food processor, pulse the dates.

  2. Add the milk, cacao, cinnamon, and salt. Blend again until smooth.

  3. In a new bowl, combine the puffed quinoa & hemp seeds with the date mixture until evenly coated.

  4. Line a baking tin with parchment paper. Spread the quinoa date mixture to make it as even as possible.

  5. In a small ramekin, microwave the coconut oil and dark chocolate until melted. Drizzle the chocolate over the bars.

  6. Refrigerate for 30 minutes. Once set, cut into 9-squares and serve. Enjoy!
