Lemon Walnut Muffins

 

Ingredients

Muffins
- 3/4 cup of milk
- 3/4 cup of vegetable oil
- 1 egg
- Lemon zest
- 1/2 cup of plain yogurt
- 2 cups of flour (I subbed 1/2 cup of flour with rolled oats!)
- 1 cup of strawberries, chopped
- 1/3 cup sugar
- 1 tbsp baking powder
- 1/4 tsp salt

Crumble
- 1/2 cup walnuts
- 1/4-1/2 cup brown sugar
- 1/4 cup flour
- 2 tbsp unsalted butter, melted


Instructions

1. In a large bowl, combine the milk, oil, yogurt, eggs and lemon zest.
2. Add in the flour, sugar, baking powder and salt. Do not overmix!
3. Fold in the chopped strawberries
4. Let the mix sit for 1h.
5. In a small bowl, prepare crumble mixture.
6. Preheat the oven to 425 F.
7. Line a muffin pan, then fill with mix. Sprinkle over the crumble mixture.
8. Bake for 8 minutes until golden & enjoy!
