Miso Noodle Bowl

 

Ingredients

  • 100g buckwheat soba noodles

  • 1 cup of mushrooms

  • 1 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1.5 tbsp miso paste

  • 1 bunch of leafy greens such as broccoli, bok choy or spinach

  • Toppings of choices (ex: hard boiled egg, edamame, veggies, etc.)

Instructions

  1. In a pot of boiling water, cook the soba noodles for 5-10 minutes until just al dente. Strain, rinse and set aside in a bowl of cold water to prevent the noodles from cooking further and sticking together.

  2. Pan fry the mushrooms with the sesame oil and cook for 2 minutes. Add in your miso paste and tamari. Toss in the soba noodles, coating them in the tamari/miso sauce. Set aside.

  3. Saute the leafy green vegetable of choice until bright & crispy.

  4. Place noodles and greens on a plate then add toppings such as edamame, boiled eggs and extra veggies.
