Classic Egg/Salmon Salad Sandwiches

 

Ingredients

  • 1 can of salmon, drained or 3 boiled eggs

  • 1-2 Tbsp of mayo (depending on how you like it!)

  • 2 Tbsp greek yogurt

  • 1 tsp Dijon mustard

  • 1/2 Tbsp lemon juice + zest of 1/2 lemon

  • 1 stick celery, chopped small

  • (optional) 1-2 Tbsp capers, drained

  • 1-2 Tbsp red onion, chopped small

  • (optional) 1 Tbsp fresh dill, chopped

  • Salt & pepper to taste

  • Slices of bread

  • A leafy green of your choice (ex: spinach, lettuce, arugula, etc.)

Instructions

  1. In a bowl, mash the salmon or hard boiled eggs.

  2. Prep the other ingredients and add them to the bowl, then mix it all together.

  3. Taste and season with salt & pepper/adjust ingredients as needed.

  4. Assemble the sandwich with your choice of garnish such as lettuce, tomato and extra veggies on the side!
