Classic Egg/Salmon Salad Sandwiches
Ingredients
1 can of salmon, drained or 3 boiled eggs
1-2 Tbsp of mayo (depending on how you like it!)
2 Tbsp greek yogurt
1 tsp Dijon mustard
1/2 Tbsp lemon juice + zest of 1/2 lemon
1 stick celery, chopped small
(optional) 1-2 Tbsp capers, drained
1-2 Tbsp red onion, chopped small
(optional) 1 Tbsp fresh dill, chopped
Salt & pepper to taste
Slices of bread
A leafy green of your choice (ex: spinach, lettuce, arugula, etc.)
Instructions
In a bowl, mash the salmon or hard boiled eggs.
Prep the other ingredients and add them to the bowl, then mix it all together.
Taste and season with salt & pepper/adjust ingredients as needed.
Assemble the sandwich with your choice of garnish such as lettuce, tomato and extra veggies on the side!
