DIY Spring Rolls
Ingredients
Rice paper
(Optional) Rice noodles, cooked as per instructions
Choice of protein (ex: chicken, boiled shrimped, baked tofu or tempeh, etc.)
Lettuce
Cucumber
Dipping Sauce
2 tbsp peanut butter
3 tbsp hoisin sauce
1 tsp sesame oil
1 shallot, minced
Water
Instructions
In a small heated pot, sauté the shallots and then stir in all dipping sauce ingredients.
Assemble the spring rolls by lightly soaking the rice paper, laying out the ingredients and then rolling like a burrito.
